I was fortunate to meet MOF (Meilleur Ouvrier de France Pâtissier) chocolatier Stéphane Leroux during his visit to Australia at Fine Food Expo - thanks to Apromo Trading for organizing the Master’s visit. I was also honoured to be able to present my chocolates to the Master and get his feedback on my Enjoy Dark Chocolate creations.
Stéphane earned the title of Meilleur Ouvrier de France Pâtissier in 2004, and has been awarded first prize for Artistic Work at the World Pastry Championship in Las Vegas (twice!). He is a teacher at the ENSP - Ecole Nationale Supérieure de Pâtisserie in Yssingeaux (FR), at Stéphane Glacier, Artisan pâtissier engagé and at the The French Pastry School in Chicago (USA).
I now have a signed copy of his latest book ‘Bleu Chocolat’.
