Last minute dessert when you really want to impress. This recipe is ultrasimple. It takes only 15 minutes to make. It’s just a must eat whilst mangoes are in season.
- 1 large mango
- 2 egg whites
- 1/2 cup caster sugar
- 400 gr vanilla yoghurt (I use Greek style yoghurt)
“Mango fool” only takes 15 minutes to make:
- Peel the mangoes using a vegetable peeler. Blend mango.
- Beat egg whites until soft peaks form. Gradually add sugar. Gently fold yoghurt into egg-white mixture.
- Layer mango mixture and egg white mixture into 4 serving glasses. Refrigerate 30min before serving.
