Mango Fool

Last minute dessert when you really want to impress. This recipe is ultrasimple. It takes only 15 minutes to make. It’s just a must eat whilst mangoes are in season.

Ingredients

  • 1 large mango
  • 2 egg whites
  • 1/2 cup caster sugar
  • 400 gr vanilla yoghurt (I use Greek style yoghurt)

    Method

    “Mango fool” only takes 15 minutes to make:

    1. Peel the mangoes using a vegetable peeler. Blend mango.
    2. Beat egg whites until soft peaks form. Gradually add sugar. Gently fold yoghurt into egg-white mixture.
    3. Layer mango mixture and egg white mixture into 4 serving glasses. Refrigerate 30min before serving.
